List of ingredients and Importance of each ingredient

  • Milk

Milk is the base for this recipe. I prefer to use full-fat (3.5%) milk over 2% for that creamy feel.

  • Whipping Cream (35% fat content)

Always use full fat whipping cream with at least 35% fat content. This gives extra richness and creaminess to our pudding.

  • Eggs

Use room temperature eggs. Refer here to see how to bring eggs to room temperature faster.

  • Sugar

Use simple plain white granulated sugar, nothing fancy.

  • Vanilla Extract

This is the main ingredient in our recipe. You can also use vanilla bean paste. Its just that pudding will have tiny black pieces.

  • Corn Starch

Call it as corn starch or corn flour, they both are same. This makes the pudding thick.

  • Butter

A touch of butter is required to take this pudding to new level

  • Whisk
  • Measuring Spoons

Step by step recipe (with images) to make homemade vanilla pudding recipe. How to make vanilla pudding?

  1. In a bowl, add egg yok, corn starch and milk. Whisk it until smooth.
  2. In heavy bottom pan, add remaining milk, sugar and heat it until sugar is melted.

3. Remove from gas. Take some milk and slowly add to egg yolk, corn starch mixture.

4. Now add this egg mixture back in steamed milk/sugar.

5. Cook on medium heat until it is thick.

6. Remove from heat and add vanilla extract, unsalted butter and salt. Mix it well.

7. Transfer to bowl, cover it with plastic wrap. Keep in refrigerator for 4 hours or overnight.

8. Remove from fridge and Stir it with spatula once.

9. Now serve in serving bowl.

10. Decorate with raspberry or whipping cream or blackberry and serve chilled.

  • Room Temperature Ingredients

As I always say, always use room temperature ingredients. Please refer here to check my guide for bringing ingredients to room temperature.

  • Pure Vanilla

For that bursting flavor of vanilla, I always recommend to use pure vanilla extract or vanilla bean paste. Please stay away from imitation.

  • Tempering Eggs

This is very important step in our recipe.

Now, what is tempering, why is it required?

  • Tempering simply means you are adding two ingredients which are at different temperature.
    • It is required so that our eggs don’t cook and make scrambled eggs.

  • Continuous Stirring

It is very important to continuously stir the pudding mixture when tempering the eggs and while cooking the mixture on stove-top. This will avoid cooking the eggs.

  • Maintain the heat

Always cook your mixture on low to medium temperature. Do not increase the temperature to reduce the cooing time.

  • Cool the pudding

This tastes better, wait, not better but best when served chilled. Just cover it with plastic wrap so that skin doesn’t form on top. The consistency will change as it cools down meaning it will get thick as it cools down.

  • Can I simply use milk on this recipe?

Absolutely! if you are short of whipping cream, replace it with equal amount of milk. It will have little less creaminess but no big difference in taste.
